Ingredients: For Curry

  • ½ lt Water
  • 3 large Onions
  • 2 Green Chillies
  • 2 Black Cardamom
  • 1 tbsp chopped Ginger
  • 1 tbsp chopped Garlic
  • 12 Cashew Nuts
  • 100 ml Water
  • 3/4 cups Curd
  • 1 tbsp Oil
  • 2 tbsp Butter
  • 1 tsp  Jeera
  • 3 Cardamom
  • 5-6 Peppercorns
  • ½ tsp Turmeric
  • 1 tsp Chilli Powder
  • 1 tsp Coriander Powder
  • 1 tsp Cumin
  • ½ lt Water
  • Salt to taste

For Peas:

  • 1 tbsp Butter
  • 1 cup Methi Leaves chopped
  • 1 cup Green Peas
  • Salt to taste
  • ½ cup Cream

Instructions  for the recipe of Methi Matar Malai

  1. Prepare the Curry Base

    • Boil water in a pan.
    • Add quartered onions, green chillies, black cardamom, chopped ginger, chopped garlic, and cashew nuts.
    • Once onions are soft, strain the masala from its water, preserving the infused sweetness.
    • Separate green chillies and black cardamom for later use.
    • Blend the mixture with curd to form a smooth puree.
  2. Temper the Spices

    • Heat oil and butter in a pan.
    • Add  jeera, black cardamom, cinnamon, green chillies, and black peppercorns.
    • Stir fry in low flame and add turmeric, red chilli powder, coriander powder, and cumin powder.
    • Pour in the blended paste and cook until the rawness of curd disappears.
  3. Prepare the Peas

    • In a separate pan, add butter and  methi leaves.
    • Stir-fry and add green peas along with salt.
    • Mix the curry into the peas, cooking until it thickens.
  4. Finish with Cream

    • Once the curry is thick and oil separates, add cream.
    • Stir gently and turn off the flame.
  5. Garnish and Serve

    • Garnish with fresh coriander leaves.
    • Methi Matar Malai is ready to be enjoyed with your favorite Indian bread or rice.
