Mint and Peanut Chutney – A staple in my kitchen, alongside tomato onion chutney. This delightful condiment is incredibly simple to prepare, taking just 6 minutes of your time. The result? A mouthwatering, refreshing treat ❤️
Ingredients:
- 1 cup fresh pudina (mint leaves)
- 1 cup dhaniya (coriander leaves)
- 1/2 cup fresh coconut
- 1/2 cup roasted peanuts
- 1 tsp ginger, peeled
- 2 green chillies
- Small piece of tamarind
- Salt (to taste)
- Water (as needed)
For the Tadka (optional):
- 1 tsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp urad dal
- 2-3 dry red chillies
- 1 sprig of curry leaves
Instructions:
- Gather all the ingredients for the chutney.
- In a blender, combine the mint leaves, coriander leaves, fresh coconut, roasted peanuts, ginger, green chillies, tamarind, and a pinch of salt. Add water as required to assist with blending.
- Blend the ingredients until you achieve a smooth and creamy chutney. Adjust the consistency by adding more or less water to suit your preference. Once blended, set the chutney aside.
- For the optional tadka (tempering): In a small pan, heat the oil. Add mustard seeds and let them splutter. Then, add urad dal, dry red chillies, and curry leaves. Sauté until the dal turns golden brown. This tadka adds an extra burst of flavor to the chutney.
- Pour the tadka over the chutney, and your Mint and Peanut Chutney is ready to serve.
