  • 2 tbsp ghee
  • 1 black cardamom (badi elaichi)
  • 3 cloves (laung / lavang)
  • 1 small stick cinnamon (dalchini)
  • 1/2 tsp cumin seeds (jeera)
  • 1/2 tbsp green chilli paste
  • 2 tbsp finely chopped garlic (lehsun)
  • 1 cup finely chopped onions
  • 1/4 tsp turmeric powder (haldi)
  • 1 tsp chilli powder
  • 2 tsp coriander-cumin seeds (dhania-jeera) powder
  • 1/2 cup chopped tomatoes
  • 1 tbsp fresh cream
  • 1 tbsp dried fenugreek leaves (kasuri methi)
  • Salt to taste

For The Tempering

  • 2 tbsp ghee
  • 1 tbsp roughly chopped garlic (lehsun)
  • 1/2 tsp Kashmiri red chilli powder

Method:

  1. Prepare the Base:
    • Heat oil and ghee in a pan. Add black cardamom, cloves, cinnamon, and cumin seeds. Allow them to splutter.
    • Add green chilli paste and finely chopped garlic. SautĆ© until garlic turns golden.
  2. Add Aromatics:
    • Add chopped onions and sautĆ© until they turn translucent.
  3. Spice it Up:
    • Add turmeric powder, chilli powder, and coriander-cumin seeds powder. Mix well.
  4. Introduce Tomatoes:
    • Incorporate chopped tomatoes and cook until they soften.
